The history behind the Boxcar Cocktail is sparse… but it seems to be a hybrid cocktail, a next generation crossbreed situation between a Pink Lady and a White Lady…….
I shall name it the “The Powder Pink Lady”?? (although the grenadine does make it pretty pink…)
Anyways… this hybrid cocktail is fresh and zingy with a nice smooth frothy top! The tart, bitter flavour brought by the lime and the grenadine is balanced with the nice sweet orange taste that comes with the Cointreau. Very yummy indeed!!
Ingredients Required
60 ml Portobello Road
15 ml Cointreau
25ml Freshly Squeezed Lime Juice
10ml Grenadine
Egg White
Ice
Method
Add all the ingredients into your shaker, and shake shakeshake to your hearts content (good upper body workout :P)
Strain this into a chilled coupe glass (I topped it with some gyp for extra prettiness and presentation)…
sit back, relax and indulge!
The Portobello Road Gin in this recipe really adds a good gin taste, due to it being such a robust gin, it really shines through the cocktail.
Enjoy 😊
I usually get strong (adverse) reactions when I drink alcohol, but gin is ok for some reason. This cocktail sounds and looks delightful.

Tasted great you should give it a try maybe with less gin and bit more of the other ingredients if alcohol doesn’t agree with you 😊
